Executive Chef & Director, Troika Sky Dining
A foodie who has taken fine dining to the skies
Restaurateur duo extraordinaire, Christian Bauer and Eddie Chew are rock stars in the fine dining arena, with a string of swanky restaurants and hip bars. Born in Luxembourg in 1964, Bauer loves to eat and produce good food, having honed and refined his self-taught culinary skills through time and across different cultures.
Hailing from a family of foodies, he was recognised for his culinary talent by his mother who put in charge of her dinner parties. Whipping up eight-course dinners for 12 became routine throughout his teens. But he went on to teach English in London and Hong Kong, before accepting a job offer in Malaysia at the start of the '90s. He later managed Tower Records when it opened in Kuala Lumpur, and it was during his time here that he made up his mind to pursue his culinary dreams.
In 2001, Bauer and Chew opened their first restaurant, Frangipani, where he was also executive chef. After it closed down in 2011, they went bigger, establishing the incredibly posh and refined Troika Sky Dining.
