Chef Hiep Truong has held prominent positions at some of Ho Chi Minh City’s most esteemed restaurants, including Quince Saigon (Tatler Best 2024), Little Bear Wine Bar (where he co-cheffed), Villa Song, MAD House, Noir. Dining in the Dark, and The Jetty Saigon.

A native of Hue, a region steeped in cultural and culinary history, Chef Hiep has always regarded cooking as his greatest passion. From a young age, he has worked tirelessly to refine his craft and emerge as a professional chef. His creations are infused with the rich, deep flavours of his homeland, thoughtfully reinterpreted with reverence and skill.

As 2024 drew to a close, Chef Hiep reached a pivotal moment in his career, stepping into the role of co-founder, head chef, and leader of Upstairs Tasting Room. This marks the beginning of an exciting new chapter, as he embraces the biggest challenge of his culinary journey.

At Upstairs Tasting Room, each dish is an artistic expression that celebrates both traditional heritage and contemporary techniques, offering diners a cultural adventure that defies definition and invites exploration.
