Known for his mastery of Chinese fusion cuisine, chef Chang Liu centres Chinese culinary influences in his creations at Shanghai’s Michelin-starred Yongfoo Élite, but also dips into Italian, Nordic and Japanese cuisines. That multicultural outlook is a reflection of his starry journey as the first Chinese chef to work at Denmark’s famous Noma restaurant and his time as sous chef at Italian-Japanese restaurant Tokuyoshi in Milan.
