Chalee makes eating offal a pleasure at 100 Mahaseth, his much loved Bangkok restaurant that celebrates the fiery flavours of Thailand’s northeastern Isaan region. He is also focused on waste reduction, with an eco-conscious, nose-to-tail menu that makes sure no part of an animal goes unused, in line with traditional but often forgotten Thai dining practices.
