RAW’s chef André Chiang is ready to give the world a taste of Taiwan

World-renowned chef André Chiang is the founder and creative director of RAW, Restaurant ANDRE, Burnt Ends, Bincho, MeatSmith, Porte 12, The Bridge, Zen, Sichuan Moon and One Tree Hill.

The international chef has earned many honours: he was chosen by Elite Traveler as one of the 15 Most Influential Chefs in the World for the Next 10 Years and received the Lifetime Achievement Award from Asia’s 50 Best Restaurants in 2018, making him the only Chinese chef to have appeared on the Michelin Guide, World’s 50 Best, and the Top 100 Chefs in the World lists.

Chiang started his culinary journey at the age of 13 and pursued his passion in France for over a decade. At 25, he became the executive chef of a three-star Michelin restaurant in France. Known for his unique culinary philosophy, Chiang has been acclaimed as a culinary philosopher. In 2020, André and His Olive Tree, a documentary on his inspiring career of more than 30 years, was released. His approach to life and philosophy also serves as a guide and inspiration for the younger generation.

In 2021, Chiang announced his return to RAW, his Michelin two-star restaurant in Taipei. During the challenging times of the pandemic, he connected 13 world-renowned restaurants and chefs, presenting the World Tour III menu, garnering international visibility for Taiwan and bringing hope to the global culinary scene. Later in the year, he ventured into the metaverse, launching the world's first edible NFT and addressing sustainability issues.

In 2022, Chiang introduced an epic French classical cuisine concept to the RAW menu in Taiwan, collaborating with a dream team from France. This Taiwan-France partnership once again acted as a bridge between the local and global culinary scenes, extending the influence of Taiwan’s younger generation in the culinary world. In August 2023, he published a new book, Work Aesthetics, a comprehensive exploration of his work aesthetics developed over more than 30 years.
