Apart from overseeing his own restaurants in Rome and Cape Town, the “King of Carbonara,” chef Luciano Monosilio travels the world consulting for different establishments. Most recently, Monosilio came to the Philippines to consult for Italian favourite A Mano, fortifying their operations as they close in on the opening of their third branch—and he even held a 7-course dinner at A Mano BGC, where lucky guests got to sample the famed carbonara that earned him the title of culinary royalty.
