Imamura restaurant heads overseas

Imamura, to me, has always been one of the finest Japanese restaurants in Singapore. I still remember dining at this intimate 13-seater two years ago—walking up the cobblestone path, watching chef Hirofumi Imamura and his team work with quiet precision, and savouring his donabe rice dish unveiled with a flourish. Since its opening in 2022, the restaurant has built a loyal following, yet rising costs, shifting dining habits, and the stronger appeal of eating Japanese food in Japan made it difficult to sustain. Even after experimenting with lunch menus and considering a more central location, Imamura has decided to close its doors at the end of the month.

But as one chapter ends, another begins. Imamura is preparing new ventures in Bali and Tokyo, starting with Kimpton Bali Ubud next year. There, Imamura plans a dual concept: an omakase fine dining counter echoing his Singapore restaurant, and a more casual Japanese spot serving robatayaki, tempura, sashimi, and more at a friendlier price point using mostly local fish prepared with shinkeijime. In Tokyo, he has his sights on Ginza, aiming to attract the global travellers who already know his cuisine.
