Land of spice

Hello,

When opening a restaurant, there's nothing quite like immersing yourself in the food culture that you're taking inspiration from. That's exactly what Black Sheep Restaurants did ahead of the opening of Prince and the Peacock, with Tatler in tow. Across several days, the entourage visited fine-dining restaurants, hole-in-the-wall eateries, heritage sites, forts, palaces and more in Delhi, Jaipur, Udaipur, Hyderabad, Lucknow and Chennai. Read all about our travels and what we found in the spice markets of India here.

Also this week: how creative multi-hyphenate Waris Ahluwalia plans to shake up the non-alcoholic market, where two female Thai chefs get their inspiration, and the most expensive cocktails in Singapore.
