Cooking up an inviting mood this Christmas, domestic goddess Kelly Sia shares what homemade wonders will be served on the family table this festive season

My family will be celebrating Christmas in Singapore this year. I'm really looking forward to cooking up a feast for them. I'll go out on a limb and experiment with a country-style paté which I'll serve with my homemade pickled shallots and sourdough bread.
Everyone in the family loves a great cut of beef, so I'll get the best – rack of prime rib on the bone, which I will slow roast (hopefully) to perfection. I'll serve the beef with sweet potato fries, butter lettuce salad with blue cheese, avocado, cranberries and candied pecans, and a mixed mushroom and truffle lasagne. For dessert, I'll bake a pumpkin cheese cake and apple tarte tatin (my husband's favourite).
I'm not a big eggnog fan so instead I'll make my classic ‘Kellytinis’. Delicious but dangerously potent!

On holiday with the family in Athens
I celebrate Christmas every year, but in my heart I celebrate it everyday, considering the true meaning of Christmas - which is the birth of our Lord and Saviour Jesus Christ.
I love the holiday season because it's rare that we get all the kids together at the same time to celebrate an occasion. Even birthdays are difficult to round up everybody as we have one daughter living in New York and another in London. But Christmas is different – I love it when we all get together for Christmas.
The best Christmas I ever enjoyed was two years ago when we went to Israel. It was so meaningful to be in the land where Jesus was born and to walk through the places he walked.
