Paradero Todos Santos, Baja California Sur, Mexico

If we were to imagine a luxury resort on the planet of Tatooine, the fictional desert world orbiting twin suns in Star Wars, we imagine it would look something like Paradero Todos Santos.

The resort is set on a 2.2-hectare site in Todos Santos, a town on the southwestern coast of Mexico’s Baja Peninsula, and features a series of earthy and beautifully brutalist structures that melt into the surrounding landscape of family-owned farms and the Sierra de la Laguna Mountains. 

“Understanding the surrounding nature as the most important element of the project, the property is organised along the perimeter of the plot, so that each suite and some of the common areas have an unobstructed view of the surroundings,” according to Ruben Valdez and Yashar Yektajo, the architects behind Paradero. Meanwhile, the interiors were overseen by Guadelajara studio B-Huber.

The hotel has 35 guest suites, including several with private rooftop terraces featuring “star nets”, which are large hammocks bolted into the walls. There’s an infinity pool with a unique crescent-shaped deck facing the wild of the desert or the beach, which is a 20-minute drive away.

Provenance plays an important role at Paradero, which features decor by Mexican artisans and lansdscaping that features dozens of endemic plants, including Mojave yucca and red sand verbena. The restaurant at Paradero serves Mexican cuisine with a sense of place, using produce sourced from local farms, its own organic garden, the Pacific Ocean and the Sea of Cortez.

Cempedak Private Island, Bintan, Indonesia

Just a 25-minute boat ride from Bintan in Indonesia is Cempedak Private Island, where guests are welcomed by a stunning vista of white sand beach, tropical flora and the crescent-shaped alang alang roofs of the 20 villas that dot the island. Each villa is seductive and secluded, spaced out generously over the island for maximum privacy. 

This eco-conscious resort is made almost entirely of bamboo, paired with the creative use of natural materials such as lava stone (sculpted into waves that add texture to the walls), and copper and bronze accents as table bases, plant pots and patina-laden backsplashes for a warm, welcoming feel.

For wining and dining, Cempedak Private Island's main restaurant is laid out with plenty of alcoves and overwater private tables, while Dodo Bar boasts a cool communal table and ocean views.

Not private enough for you? The lovely staff can pack a picnic hamper to take to one of the nearby deserted beaches or islands. 

The Shore at Katathani, Phuket, Thailand

Located on a hilltop on the far end of Kata Noi Beach, this intimate boutique hotel boasts 98 spacious private villas, each with living and dining spaces, private pool and sun deck. The Pool Villas have hillside or garden views, while the aptly named Sea View Pool Villas have uninterrupted views over the Andaman Sea. 

Built for romance, The Shore at Katathani offers a series of private dining options with the choice of three venues; The Kissing Point, a lantern-lit glass deck that sits over the water; A cosy BBQ for two on the sand; or at the hotel's impressive glass-encased chapel.

The Green O, Montana, United States

This sophisticated woodland hideaway sits among towering pines in the remote town of Greenough, Montana.

Spanning 15,000 hectares, the property comprises 12 unique accommodations in four modern designs: Tree Haus, a double-storey home elevated 4.5 metres in the air; the curvaceous Round Haus, boasting 180-degree views of the forest; Green Haus, which immerses its guests in nature with a skylight above the bed for stargazing and 1,035 square feet of outdoor space; and Light Haus, an exclusive residence with a glass-encased living room to allow for sun, moon and stars to enter throughout the day. To get around, guests have use of a personal Lexus SUV during their stay.

There’s a fifth haus—The Social Haus—where guests can get together to eat and drink, featuring a menu that embraces the surrounding agricultural community with locally raised, foraged and farmed produce including cherries, wild chamomile, elk, beef and even unexpected flavours like Douglas fir tips.

If you feel like getting out of the haus, The Green O has activities spanning horse riding along the river, abseiling down the side of a 50-metre rock face, hot air ballooning, and snow-mobile tours during colder months.

Casa Angelina, Amalfi Coast, Italy

This adults-only boutique hotel is built into the cliffside in Praiano, a quiet village within spitting distance of Positano and Amalfi. Casa Angelina’s location allows easy access to La Gavitella Beach, one of the few swimmable beaches along the region’s coastline.

Marco de Luca, a local designer, is behind Casa Angelina’s brilliant white interiors found throughout the hotel—right down to the Etro bed linens—with bold pops of colour by way of local flora and citrus trees, the azure sea and an eclectic collection of art, including Murano glass sculptures by Cuban artist Alfredo Sisabravo.

There are 42 rooms and suites, with the most impressive being the Eudesea Suites fashioned from former fishermen’s houses, which are forged in the rocks overlooking La Gavitella. For more stellar vistas, head to Un Piano nel Cielo, Casa Angelino’s fine dining restaurant on its top floor. 

The pool, while small, is nothing short of stunning. A sleek wooden deck is lined with sun loungers looking out to the sea, and shrouded by Amalfi lemon trees.

A number of exclusive experiences can be arranged, including luxury boat trips up and down the coast and a one-on-one chef’s table dinner featuring a three-course meal by chef Leopold Elefante.

Castle Hot Springs, Arizona, USA

Located on the northern tip of tropical Hamilton Island, the hotel has 60 pavilions surrounded by lush vegetation and with views overlooking The Great Barrier Reef.

Can Simoneta, Mallorca, Spain

Can Simoneta sits on a clifftop near Capdepera, where its restaurant and rooms are set in historic buildings—including one built around 1812 to house an ailing priest, for whom sea baths had been prescribed. Keeping tradition alive, sea-water baths and variety of massages are on offer at the hotel. 

There are 18 guest rooms, two swimming pools – one heated and one unheated – and a clifftop Jacuzzi.  Its restaurant serves modern Mediterranean fare, with a side of bay views over Canyamel. 

Guests at Can Simoneta have direct access to the sea and one of Mallorca's most pristine beaches via a curved stairway carved into the cliff.
