From secret Bangkok bars to Seoul’s dreamlike cocktail dens, the special guests at K11 Musea’s Sips by the Sea turned golden hour by Victoria Harbour’s into an unmissable experience
At the heart of Sips by the Sea is a simple but compelling idea: that a cocktail tastes different when the sky above it turning amber over Victoria Harbour. K11 Musea has emerged as Hong Kong’s ultimate fine dining haven — a sanctuary for discerning epicureans in search of the extraordinary. This time it brings together some of Asia’s most celebrated cocktail creators and their exclusive pours to the limited-run sky bar, each designed to mirror the shifting light and mood of dusk on the waterfront. Running across the sixth-floor Sculpture Park terrace at K11 Musea from May 16 to 31, The programme has already moved through creations from two Hong Kong establishments: Socio’s sustainability-led Sundown, a rum-based cocktail built around banana peel and pomegranate that captures the fleeting magic of golden hour; and Tell Camellia’s Purple Sky, a smoky, tea-led creation crafted from lapsang, purple bud tea and smoky vodka, lifted with pineapple, that captures that specific violet quiet before the harbour lights take over. Bangkoks Opium Bar, a Tatler Best Bar Asia-Pacific 2025 and a fixture on Asia’s 50 Best Bars, anchors the weeknight programme with two cocktails drawn from its signature language of layered storytelling: the floral butterfly pea gin sour Muse, and the mezcal-tepache highball Sea.
The final guest shift, on May 30, belongs to Alice Cheongdam. The Seoul speakeasy is a Tatler Best award recipient and has spent a decade on Asia’s 50 Best Bars list, thanks to its approach to cocktails that draw from Korean fermentation and a whimsical, sensory-forward approach to the form. Founder and award-winning mixologist Terry Kim brings that sensibility to the Sculpture Park for one night only, presenting the bar’s signature drinks alongside Mellow Dream, a gin sour containing white grape, peach, mango, honey and lemongrass, underpinned by cinnamon and thyme, that unfolds gradually and aromatically—much like the evening itself.
Floral styling throughout the space is by Hong Kong artisan Kirk Cheng, and a curated selection of wine by ThinkWine in Soho and whisky runs alongside the cocktail programme for those who prefer to drink their golden hour differently.
The series closes on June 6 with Sip & Spin, a high-energy cocktail party presented by Social Club Series that trades sunset dreaminess hour for a proper dancefloor. Kyoto bar Bee’s Knees—known for its quietly subversive take on classic cocktails—joins two Tatler Best honourees—the technically dazzling CMYK from Changsha and the Hemingway-themed The Old Man Hong Kong—while curated DJ sets take over the terrace. It is a fitting finale for a series that has spent the month proving that in Hong Kong, the harbour is always the best seat in the house.
