1. Green Onions

Green onions are one of the easiest vegetables to regrow! Simply save the stalks of the onions with its roots, place it in a glass jar with water, and leave it in a place it can get sunlight. Change the water and wash its roots every few days to keep it fresh and viola — you now have a (virtually) infinite supply of green onions. You can do the same for leeks although due to its size, it’s bound to take a little longer.

2. Carrots

Although you won’t be able to grow a full carrot from a carrot top, you can still grow carrot greens to make pesto or chimichurri. Simply cut the top off the carrot and keep it in a bowl of water. Its leaves should start growing quite quickly! Don’t forget to change the water and wash the carrot every so often to keep it healthy and fresh.

3. Some Herbs

Basil, mint, and cilantro can all be regrown. Simply select a stem that’s around 3 to 4 inches long, and place it in a jar of water. Roots should eventually begin growing after a week or two. When it does, transfer it into a pot of soil or garden space and watch its wonderful aroma take over your kitchen space.

4. Lettuce

Looking to make some salad? Try making one with regrown lettuce. All you need is the bottom part of a head of lettuce — where the stem is. Place this in a bowl of water and in a matter of days, new leaves will begin to sprout. It grows quite quickly too so there’s always room for a second serving.

5. Lemongrass

Lemongrass is a great addition to iced tea and also propagates really quickly! Much like the other vegetables on the list, all you need to do is place its stalk in a jar of water until it starts to grow roots. Plant it in soil once that happens and you have yourself  a gift that keeps on giving.

6. Tomatoes

Tomatoes are a great addition to so many dishes — from pasta to meat, even salad. To grow your own tomato plants, save a tomato slice with seeds and place it on a pot with soil. Cover the slice with more soil, but not too much, about half an inch of soil will do. Water it daily and watch it grow to produce more yummy, fresh tomatoes!
