The Singapore outpost of the Miami-headquartered restaurant group celebrates crowd-pleasing recipes from the American South

 

At present, Yardbird at Marina Bay Sands remains the first and only international outpost of famed restaurateur John Kunkel. Specialising in southern American cuisine, the restaurant celebrates fresh ingredients, traditional comfort food and Southern hospitality. The namesake fried chicken is brined for 27 hours before being tossed in a melange of spices. It’s served with a crisp Vermont cheddar cheese waffle alongside watermelon sprinkled with lemon and pepper. Other standouts include the crab cakes made with lump crab meat; shrimp lobster avocado roll; and lobster mac and cheese. The bar programme is no slouch either. It features one of Asia’s largest collections of American whiskeys as well as an extensive cocktail, wine, and beer list. The double-floor interior features a modern-rustic design with industrial touches paying homage to the restaurant’s American roots. Outdoor seating
on the top floor overlooks the scenic Marina Bay skyline.
