Mastering the fine balance of old and new, traditional and modern is the key to evolving a cuisine. Ying of Altira Macau strikes just the right chord, preserving tasty traditions while presenting modern elements to create new classics. The transformation begins with its eclectic interiors—
gold beaded curtains separate the semi-private tables from main dining area, while glass mosaics and golden graphics of auspicious cranes and blooming peach blossoms match with geometrical shapes that fuses the past with the future. Ying’s show-stopping live flambé Iberico pork char siu is a must, but well-prepared seafood are also highly recommended, as is the abundant selection of vegetarian options which are just as creative as the meaty courses. Innovation extends to desserts as well, as a rare find of sweetcorn soup with bamboo pith is a surprising departure from the ordinary sweet ending. Wine and artisanal tea service are both attentive and keen.
