Helmed by chef Vianney Massot, this restaurant delivers visually stunning plates that delight diners with their symmetry and precision. Take the macaroni dish, for example, arranged in tubular form and with each piece of macaroni studded with black truffle. Flavours are spot on, too—delicate, considered and highly satisfying. Massot seems adept with all types of ingredients. Vegetables are alluringly assembled, such as in Le Chou-Fleur, his cauliflower dish, which retains a natural crunch without any raw edge. It’s naturally flavoured with lobster roe and served with sea urchin. The luxuriant langoustine is trapped in by a timbale of trimmed green beans and macaroni tubes in another feat of culinary engineering, while an egg yolk cooked just-so fuses the crustacean’s flesh to a topping of caviar. Poultry in the form of chicken breast is masterfully cooked and full of natural flavour, and the milk-fed lamb (L’Agneau de Lait) is perfectly trimmed and cut, gently cooked to distil the meat to its essence.
