Set within the City Palace of Jaipur, Sarvato explores Rajasthan’s varied culinary landscape through a six-course tasting menu that celebrates the region’s seasonal produce, indigenous ingredients and heritage cooking techniques. Sun-dried berries, hand-churned dairy, stone-ground grains and spice blends guide the experience, creating plates that taste familiar without being ordinary. Traditional Rajasthani mutton curry is served with wheat phulkas (unleavened Indian flatbreads) confit garlic, and dried coconut and green chillies tempered in ghee; a rice course slow-cooked with spices, raisins and nuts; and a dessert course that draws from the sweet traditions of Rajasthan with green pepper milk ice cream and motichoor ghewar (a Indian festive sweet) with goat milk rabri and coconut shavings.
