Dining inside a restored 19th-century building is as dreamy as it sounds. Located within the old walled city of Jaipur, boutique hotel The Johri sits within the historic Lal Haveli, a prominent landmark that served as a pivotal centre during India’s Pre-Independence State Rule, as well as the Freedom Movement. Within this complex lies an elegant restaurant serving an exclusively vegetarian menu. Dishes are carefully composed around the spices, ferments and produce local to Jaipur, offering refreshed takes on classic Rajasthan cuisine. The seasonally rotating line-up features the likes of drumstick paya shorba, an interpretation of the classic Lucknow soup served with a pan-seared vegetable dumpling; fermented soybean and dahi kadhi (yoghurt-based curry) with rice noodles, Rajasthan farsan (a variety of savoury snacks) and Mathania chilli crisp; and the dal baati 2.0, a contemporary take on the Rahasthani classic that layers desi ghee baati (wheat) tart with panchmel dal, raw mango churma (North Indian sweet) and finished with artisanal murabbas (fruit or vegetable preserve).
