The Coach Restaurant brings a slice of New York to Jewel Changi Airport—and not just because of the yellow cab hanging upside down from the ceiling. The experience offers the traditional ceremony of a classic Manhattan steakhouse: well-seasoned steak tartare, punchy Maryland crab cakes and, of course, the beef. Even the lean hanger cut—USDA Prime Black Angus—is notably tender. This precision is thanks to chef Kurt Sombero, formerly of Burnt Ends and Meatsmith, who manages the woodfire in an open kitchen. Despite the high-quality fare, there are no white tablecloths here. The chicken bucket, filled with fried drumsticks featuring a craggly batter, provides a casual nod to the American South. While the steak is a highlight, the Dover sole is the true star—deboned tableside and dressed in a zingy brown butter and caper sauce.
