For the past decade, Hussain Shahzad, an alumnus of Eleven Madison Park, has been amplifying Indian cuisine through his work at The Bombay Canteen, a dining destination that shines a spotlight on the country’s diverse culinary traditions with creative and adaptive approaches. The result is a menu that remains relevant and a type of food that knows exactly what it is. Classic recipes take on new forms, familiar flavours arrive at the table in unexpected combinations and the bar menu is not afraid to lead with the usual suspects. Dishes such as ragda pattice (white pea gravy over crisp potato) and prawn bonda (deep-fried fritter) curry take street food out of its comfort zone, while the likes of birria tacos take inspiration from a Mexican classic but remain firmly rooted in Indian traditions with a Maharashtrian red curry dip.
