A breathtakingly ritzy bar at Ritz Carlton Tokyo with impeccable hospitality and avant-garde cocktails
At The Bar, inside the Ritz-Carlton, Tokyo, Chivas Masters cocktail competition 2018 global finalist Kentaro Wada infuses his avant-garde cocktails with a dash of rock ’n’ roll spirit. With a backdrop of the Tokyo skyline from the 45th floor, live music is accompanied by cocktails that likewise channel Wada’s love of rock. His signature creation, Forever 18, was inspired by his own band, using local ingredients including mirin, the sweet rice wine, which is rarely used in cocktails. He plays with savoury dashi in creations like the Mushroom Dashi-Mary, a twist on the Bloody Mary that uses shiitake and yellow tomato juice. He also uses silken tofu to make a Tofu Sour. A diverse food menu includes sandwiches, curries and Japanese options, including vegan choices.
