Perched atop the Mandarin Oriental, The Aubrey unfolds across a labyrinth of intimate rooms, each one a set piece of velvet, lacquerware and ukiyo-e prints. The cocktail programme champions Japan’s most intriguing spirits, including shochu, awamori and umeshu, all deployed with seasonal Japanese botanicals and meticulous technique. The kitchen matches the ambition, with a menu of modern Japanese izakaya fare designed for sharing. Think Hokkaido milk bread with uni, or delicate tempura, best enjoyed as the sun drops behind the harbour.
