You can’t go wrong with classic Italian dishes like basil pesto linguine—and at Testina that’s exactly what they excel at: tasty Italian food at its best. The flavour-packed dishes underscore the culinary team’s passion for craftsmanship, and can transport diners to a family dining table in Italy.
Trattoria Trippa made waves in Milan when it opened by offering unpretentious contemporary dining—with the added edge of a nose-to-tail approach, this formula proved a hit, and was brought to Hong Kong by the ambitious ZS Hospitality Group as Testina (Italian for “head”, with pig’s head being one of the signature ingredients). Oft-overlooked cuts are the stars here, from deep-fried tripe to tongue tonnata, plus classic Piedmontese dishes like ravioli del plin and hazelnut cake. Dishes are executed to a good standard and naturally go well with the list of mostly Italian wines—but don’t cancel that ticket to Milan just yet.
