Japanese chef Seita Nakahara may no longer be helming the kitchen, but the restaurant stays true to its Tokyo-Italian culinary concept under current head chef (and Nakahara’s protégé) Melvin Chou. Japanese produce reigns supreme in the six-course omakase menu, as evinced by the “produce box” presented to diners before the meal. Depending on the season, diners can look forward to savouring ocean-fresh Hokkaido uni served atop a mini toast for a delicious combination of creamy and crispy; anago (salt-water eel) fritto perched on silky cauliflower purée and browned butter for extra decadence; and angel hair pasta tossed in chilli oil sauce and topped with abalone which has been cooked for seven hours. Chou’s creations pair well with the concise list of sakes and wines available, and the attentive staff do their best to give excellent recommendations.
