Learn to make this classic French dish that has been enjoyed for hundreds of years at home

It’s the dish that reportedly made legendary chef Julia Child fall in love with French cuisine. Sole meuniere is comprised of a lightly floured sole cooked in olive oil and served with parsley butter. It’s usually served with a side of new potatoes and petit pois.

Sole meuniere has been enjoyed in France for hundreds of years, and is said to have been one of the favourite dishes of King Louis XIV. The word 'meunière' means "miller's wife", and refers to the fact that the fish is coated in flour before cooking.

Now, Marks & Spencer has joined forces with celebrity cook Ili Sulaiman to inspire your kitchen experience. They present an easy recipe for this classic, made with ingredients from the M&S Summer food range.

Sole Meunière with New Potatoes and Peas in Lemon Butter Sauce Recipe

Serves 6

INGREDIENTS

Two frozen lightly dusted dover sole

For the Lemon Butter sauce

  • 4 - 5 tablespoons extra virgin olive oil
  • 1 teaspoon salt
  • 1⁄2 teaspoon black pepper
  • 60g butter
  • One shallot chopped finely
  • One garlic chopped finely
  • Two tablespoons frozen chopped parsley

For the Vegetables

  • 1 cup frozen British petit pois
  • 200g small new potatoes
  • 2 tablespoon salt
  • Enough water to boil potatoes

For the Garnish

  • Fresh garden salad leaves
  • Honey dijon mustard dressing
  • Lemon wedges

METHOD

Step 1: Cook the Sole

  1.  Preheat the oven to 180°c.
  2.  Place the sole on a heat proof dish and cook for 20 - 22 minutes.

Step 2: Boil the Potatoes

  1.  In a large pot, add enough water to cover the potatoes, then add the 2 tablespoons of salt and bring to a boil.
  2.  Cook until the potatoes for 10 – 15 minutes until they are soft and easy to pierce with a fork.
  3.  Remove the potatoes and set them aside.
  4.  In the same water, add in the peas and cook for 1 minute until bright in colour, then strain and set aside.

Step 3: Make the Sauce

  1.  In a pan, add in olive oil and half of the butter, then. saute chopped shallots until soft for 1 minute on medium heat before adding the garlic. Cook for   another 1 minute.
  2.  Next add in parsley and season with salt and pepper, and before adding the remaining butter. Cook the sauce until it thickens.
  3.  Squeeze in the juice of half a lemon for a hint of freshness. Stir until all is incorporated.
  4.  Toss the boiled potatoes into the lemon butter sauce.

Chef's tips: Salt your water when boiling your potatoes.
