To celebrate the launch of the Asia's Most Influential: Tastemakers list in Hong Kong, Tatler Dining presents a series of pop-up events at Tatler Dining Kitchen, each showcasing the philosophy and work of various Tastemakers

This May, Tatler Asia launched its inaugural Tastemakers list as part of the Asia’s Most Influential series—a roll call of the region’s most forward thinking, original and impactful figures in F&B. It’s a list where you’ll see founders of food charities rubbing shoulders with zany wine enthusiasts, visionary mixologists with veteran chefs and all the culinary creatives in between.

But the list is not just a list—it’s a community, and that’s why we’re bringing together a cross section of the 2021 Tastemakers from Hong Kong for a series of intimate dining events at Tatler Dining Kitchen from 17-30 May. Each experience is underscored by the spirit of collaboration, with Tastemakers from different disciplines working with each other to create dishes and drinks that riff on each other’s strengths, preoccupations and philosophies.

17 May | Dinner

The Provocateurs

Featuring Lorenzo Antinori (Caprice Bar), Josh & Caleb Ng (Cut Sando Bar) and Jason Cohen (Nomad Caviar)

Who said caviar is just for fine dining? Forget the old paradigms and experience these old luxuries in new ways at our kick-off Tastemakers event which sees Josh and Caleb Ng of newly opened Cut Sando Bar, along with chef Son Pham, taking the helm of Tatler Dining Kitchen to present a small bites and sandos menu incorporated with caviar from homegrown farm-to-table brand Nomad by Jason Cohen. Meanwhile, madcap mixologist Lorenzo Antinori of Caprice Bar will create delectable and irreverent cocktails inspired by the food pairings, including elements such as Doritos in a tequila-based libation, and a homemade caviar "liqueur" made specially for the event. Expect the unexpected from these culinary provocateurs.

20 May | Dinner

Tastes Of A Faraway Home

Featuring Alison Tan (co-founder, Otium), Tegan Smyth (Table Of Two Cities) and Antonio Lai (Quinary)

Since 2016, Table of Two Cities has sought to tell the untold stories of refugees in Hong Kong through food, based on the idea that a shared meal can bring two sides of a tale together on one table. In this first-ever collaboration, Smyth and experimental supper club co-founder and food designer Alison Tan will ask three refugee cooks questions about what flavours they associate with their home of origin, and what they associate with Hong Kong. The artistic intention of this dinner is to explore how smells and tastes evoke and ground us in feelings of home, as well as centre the journey of these refugees using their kitchens to build home. Rounding off the experience is experimental mixologist Antonio Lai of Quinary, who will bring his sensitive approach to flavour and storytelling through drink to the fray. The event will erase borders, highlighting survival and community through three cooks, three journeys, and three cocktails and small plates.


25 May | Dinner

A Mauritian Family-Style Feast 

Featuring Richard and Fiona Ekkebus (Amber) and Agung and Laura Prabowo (Penicillin)

Experience a new side of award-winning chef Richard Ekkebus as he joins hands with his wife Fiona to cook a comforting feast from Mauritius, the island nation that they called home for many years prior to opening Amber. Joining them will be another dynamic husband-and-wife duo—Ekkebus’ long-time collaborator and master mixologist Agung Prabowo and Laura Prabowo of Asia’s most sustainable bar, Penicillin, as they all celebrate the marriage of local produce and tropical flavours. Also featuring cocktails made with NIP Distilling gin, one of Hong Kong's only locally produced gins. 


26-27 May | Dinner

Little Shanghai: A Mother/Daughter 4-Hands with May Chow (Happy Paradise) and Juliana Foo

May Chow and her mom (known fondly as May Ma) will cook up a storm together for the public for the first time ever, creating an intimate dinner menu consisting of delectable Shanghainese dishes, influenced by traditions from their ancestral home in Ningbo and the Chow’s family’s own twists.

Half of the dishes will be classical home banquet-style Shanghainese/Ningbo dishes created by May Ma, and the other half Happy Paradise-style dishes with a creative wine pairing by Ambrose Chiang of Project Ambrose. Expect to experience tradition and evolution of the cuisine at the same time in this unique dinner bringing together two generations.


30 May | Brunch

Tread Lightly, Golightly: A Plant-Based Brunch

Featuring Peggy Chan (Grassroots Initiatives), Jessica Fong (Common Farms) and Keti Mazzi (Certa)

Join three leading women in F&B for a multi-course brunch featuring fresh, vibrant vegetarian flavours, beautiful homegrown produce and organic Italian wines to support Zero Foodprint, a soon-to-launch NGO spearheaded by Chan in Asia. Expect the likes of smoked banana blossom with cultured almond mayo, and desserts by Jessica Chow of plant-based Bien Patisserie.
