Hullett House is all the rage at the moment, so what's the hype surrounding this new boutique hotel in Tsim Sha Tsui? Location, location, location, at the estate that was formerly the Marine Police Headquarters, which dates back to the late 19th century. The compound was completely refurbished with the goal of honouring its history whilst making it current, even trendy. The results include this accommodation with five restaurants and bars all basking in colonial romanticism. The Aqua restaurant group, best known for their swishy high-design establishments such as Aqua and Hutong, is behind the estate's latest incarnation. And based on this clip exploring the fine dining restaurants housed inside, including Cantonese establishment Loong Toh Yuen and tearoom The Parlour, the group knows how to walk the line between preserving history and adding modernist fixtures and stylings to make it all fresh and new. "One of our founders sums it up very nicely: For Hong Kong by Hong Kong, we give you old Hong Kong," says general manager of Hullett House, Phil Oaken.
