Mega-celebrity chef Alain Ducasse stopped by Hong Kong this month to unveil Spoon at the InterContinental Hong Kong after its spiffy refurbishment. The restaurant hasn't been dramatically revamped like this since it opened back in 2003. Now with new linens, chinaware, seats, menus and more, it's all in an effort to ensure Ducasse's establishment here maintains a competitive edge in the city that's increasingly cramped with more and more esteemed fine dining restaurants. "Everything has been upgraded, [even] the uniforms are new. I've upgraded the level of the food and the wine list, etc, because today the market is more mature than six years ago," says Ducasse.
The chef, renowned for his French food prepared with much contemporary flair, is obviously quite hands-on when it comes to his restaurants around the globe. He has over a dozen eateries worldwide, many have earned the coveted Michelin stars which Ducasse has collected enough to be one of the most starred chefs in this century. Exercising his perfectionist streak for maintaining a high calibre of standards, he embarks on a tour to check up on his restaurants to make sure they stay on top of the game. That includes Spoon at InterContinental Hong Kong with an extra opulent flourish throughout the interior plus a newly adapted menu. Now the restaurant's all perked up and ready for its second coming.
New entries to the menu include the sautéed milk-fed veal in cooking jus and grilled slices of pumpkin, as seen in this clip. Finish your meal with the new style exotic vacherin and coconut meringue. This video also highlights how the new wine list has evolved too. While the selection is more focused on top wines from France, the list has broadened as well with the inclusion of bottles from across Europe as well as those from obscure regions such as Lebanon.
