“Pure, simple, seasonal.” Those are the words that Chef Hideaki Sato hand-writes on each of Ta Vie’s tasting menus for the evening—a beautifully elegant summation of the philosophy behind his food. Nevertheless, that doesn’t quite prepare you for the sheer brilliance of Sato’s cuisine; marrying the finest Asian ingredients with precise French technique, all topped with a hefty dose of creativity and sophistication, each of his dishes excites, intrigues, surprises and satisfies in equal measure. The presentation of each course is exquisite (to reveal more would spoil some of the thrill) and the taste even more sublime. The opening dish of Kegani crab and avocado cocktail demonstrates Sato’s masterful command of flavours, with a black vinegar dressing that injects an expertly-judged acidity to proceedings, whilst Lung Guang chicken consommé elevates comfort food to lofty new heights thanks to some of the most delicious wonton-inspired dumplings we’ve ever eaten. The drinks list is just as thoughtful, with an extensive selection of unusual Asian wines and cocktails made from local wet market ingredients. Ta Vie’s stellar service slots in seamlessly too, being warm and unobtrusive.
