At the heart of Syun lies Nouvelle Japanese cuisine—a marriage of contemporary Japanese and Western cooking techniques

 

Headlined by celebrity chef Hal Yamashita—best known for his Shin Washoku or “New Japanese” cuisine—Syun is where traditional Japanese flavours meet modern techniques. Recently relocated to Hotel Michael, the new space is expansive yet warm, featuring wood-panelled interiors. With a focus on raw seafood and premium grilled meats, the extensive menu is led by chef Quynh Brown, formerly of several Nobu restaurants. Highlights include Yamashita’s raw Satsuma A5 wagyu beef, Hokkaido uni and caviar rolls, and the baked Australian spiny lobster with “sauce dynamite”, which delivers a fiery kick. Bestsellers such as seafood tempura, binchotan-grilled A5 wagyu ribeye and king crab fried rice—studded with king crab, prawn and salmon—remain crowd favourites. A compact wine and sake list rounds out the offering, with a wider selection of fine wines available from the Resorts World Sentosa master list.
