What sets Sushi Masaaki apart is the quality of its seasonal ingredients. Everything is handled with care, resulting in a menu that is fresh and expressive. The omakase lunch begins with kue (longtooth grouper) seasoned with awayuki shio salt. This delicate opener is followed by a fragrant matsutake and uni chawanmushi that is silken and deeply savoury. The sashimi trio—botan ebi, hirame and chutoro—is pristine, with the tuna lifted beautifully by a sake-plum accent. A warming bowl of kinki in dashi brings gentle sweetness. The sushi sequence remains the highlight. It features shima aji, akami, aji, shiro ebi, kinmedai, otoro and ankimo. Each piece is clean, balanced and thoughtfully seasoned. The lightly seared kinmedai offers a subtle smokiness, while the otoro simply melts in the mouth. Lunch concludes with a small bowl of uni and ikura, a crisp handroll and warabi mochi with Hokkaido milk ice cream.
