Behind the hinoki counter, chef Kenichi Fujimoto moves with the quiet discipline expected of someone trained in Tokyo’s most exacting sushi counter, but the atmosphere never slips into reverence. Fujimoto’s warm personality keeps the room lively, his easy humour and gentle commentary adding a sense of ease to what is otherwise a meticulously precise omakase. The restaurant itself is small, but that intimacy works in its favour. The setting is understated, with pale woods and soft lighting creating a calm stage for the evening. The progression leans firmly into Edomae tradition. Silken slices of fish arrive in carefully judged sequence, sometimes pristine, sometimes lightly treated to bring out deeper flavour.

If you’d like to pace yourself, the chef is happy to adjust the rice portion, ensuring you still have room for the tuna maki that closes the meal so perfectly.
