Sushi Arai

Japanese   |   Tokyo, Japan

An Edomae sushi institution where chef Yuichi Arai's tuna-focused craft, red-vinegar shari and two-counter setup have earned him a loyal following

The Japanese dining style omakase often means giving up control over your meal to the sushi chef. At Sushi Arai, chef Yuichi Arai has forged his own style, where diners have a say in the line-up of sushi they will enjoy—a rarity in this age of omakase. Set in the heart of Ginza, the restaurant is a friendly and approachable haunt for newcomers and regulars alike, where a skilful team crafts some of the day's freshest catches into nigiri. Despite Arai's novel approach, the interior nods to sushi restaurants of old, where the ice box is built into the rear wall, and a row of handwritten wooden plates displays fresh fish at the counter.
