Today, restaurants like Strato set the benchmark for authentic Italian fare. The semi-casual restaurant at Troika Sky Dining is home to some of the best pastas we’ve had, from the Bigoli carbonara—silky, cheese-coated strands of spaghetti cradling a cured egg yolk—to the black spaghetti tossed with sweet snow crab meat and a full-bodied lobster tomato sauce. Supplement the said recommendations with the Angus rib eye Tagliata (Italian for ‘sliced steak’); served slightly pink at the centre, Strato’s most visually stunning dish is accompanied by a lovely salsa verde.
