Shokouwa is an oasis of calm amid the buzz of the Marina Bay waterfront. The intimate eight-seater main dining counter, accompanied by a private dining room, is cosy yet dignified. While the experience begins with a sense of quiet reverence, the atmosphere quickly softens. Thoughtful gestures make the meal more approachable, from beautifully illustrated cards detailing each fish to head chef Kazumine Nishida’s engagement with guests. Each course is delivered with measured precision, showcasing Edomae-style sushi at its most refined. Highlights include delicately sliced ika nigiri brightened with lime and salt; the signature toro maki of hand-diced chutoro, otoro, negi and takuan; and the smoky richness of charcoal-seared otoro. An extensive wine and sake list is thoughtfully curated to complement the menu, rounding out a sophisticated omakase dining experience.
