Dining at Seroja is as much a lesson in the flavours of the Malay Archipelago as it is a compelling culinary experience. In the modern dining room, the open kitchen sets an unhurried rhythm, allowing the Nusantara menu to speak with clarity. A trio of delectable appetisers is followed by braised beef tripe and cheek, enriched with a village chicken broth. Savoury yet balanced, the dish’s richness is offset by the tender rice balls that accompany it. The signature roti paung arrives crisp on the outside and soft within; it is best enjoyed with the Johorean milk butter. Silver pomfret and jade abalone are lifted by a roasted tapai sauce, while mangrove wood-charred blue lobster with laksa leaf sauce adds aromatic depth. A Cameron Highlands sweetcorn wafer closes the meal on a delicious note.
