In its new home, Josh Niland’s temple to whole-fish cookery evolves into a full-scale experience: audacious, elegant, and unlike anywhere else
Josh Niland has long been hailed as a visionary—the chef who taught the world to see fish anew. But with Saint Peter’s 2024 move into the beautifully reimagined Grand National in Paddington, he now has a stage worthy of his gospel. Gone is the modest shoebox of the original site; in its place stands a restaurant that feels both assured and quietly radical.
Here, the sea is rendered in fine detail. The plates are elegant without artifice, the service crisp yet warm. Niland’s signature whole-fish philosophy infuses everything, from the bones used to craft the china to the soaps made (ingeniously) from fish fat upstairs in the adjoining hotel. A John Dory liver tart arrives trembling with grace; coral trout gleams beneath a glaze of bull kelp jam and sudachi; and the finale—yellowfin tuna bone marrow fudge—lands like a wink from Poseidon himself.
This is destination dining without the fuss: refined, precise, quietly astonishing. Saint Peter doesn’t just serve seafood—it redefines the conversation.
