• Start with the kinilaw na tuna to whet the appetite. Cubes of fresh tuna are marinated in coconut vinegar, onions, red pepper, ginger strips, and calamansi.

• The sizzling pochero has big chunks of beef shank and corn, with onions and shallots, drizzled in mushroom gravy; a local staple best consumed in good company.

• Try the garlic oxtail kare-kare served in a large claypot, seasoned with strips of mango and bagoong (shrimp paste) on the side. Pork hocks, Chinese cabbage, and eggplants are stewed with roasted peanuts, onion and garlic, offering a hearty meal on its own.
