Successfully blending traditional cuisine with modern touches is no mean feat—but it’s a task that chef Hung Chi-Kwong manages with aplomb at St Regis’ Chinese restaurant Rùn. Creative presentation, unexpected cooking techniques and the expertly-judged addition of new ingredients enliven Cantonese classics, yet without detracting from the original dishes either (though desserts feel slightly underwhelming in comparison). The generously spaced, André Fu-designed interior similarly balances the old with the new. Service is exemplary: informative, attentive and happy to accommodate menu substitutions. The wine list is impressive in size and range, but it’s the tea menu that really shines, with unusual blends and cold brews making an excellent accompaniment.
