A hidden gem in the Hangzhou Botanical Garden near West Lake, Ru Yuan is spearheading a revival of ancient Hangzhou cuisine. The restaurant, housed in a sleek, three-storey, concrete and pinewood building, blends minimalist Japanese design with stunning views of lush greenery. Chef-founder Fu Yueliang, with 40 years of culinary experience, is dedicated to showcasing local produce and flavours. Signature dishes include West Lake fish in vinegar gravy, reimagined with soon hock fish instead of grass carp, and a rich fish soup. Other highlights include yellow wine-braised Jinhua pork belly, crowned with fried Longjing tea leaves; and handcrafted dim sum. The dining experience is refined yet relaxed, with private glass-wrapped dining rooms and a whisky bar.

Be sure to try the West Lake sweet vinegar fish at Ru Yuan, where traditional grass carp is replaced with tender bamboo shell fish, enhanced with a rich fish broth for a delightful flavour.
