Imamura provides one of the country’s most artful, luxe, thoughtful and elegant dining experiences. Somehow overlooked by other guides, this Japanese kaiseki-inspired restaurant deserves the highest accolades possible. Uniquely tucked away in an old colonial chapel in Sentosa, the walk up to the restaurant from your designated parking spot (provided to all guests) immediately and magically transports you to rural Japan. The restaurant is stunning, a stage created for a master chef whose incredible dishes showcase the season’s best ingredients. While there are only 12 seats plus a private dining room, they don’t turn the tables, so to speak, so you are not rushed during your meal. Courses focus on produce from specific Japanese prefectures, which are paired with condiments from the same geographic areas. The chef believes this synergy brings out the best sense of time and place, while simultaneously enhancing flavour. The sake list is fantastic, with a wide range of choices and exclusive bottles.
