High-quality and fresh ingredients are treated with respect and plated beautifully. Start with the prawn toasties, which are topped with tobiko, as well as the tuna tartare, served with crisps. A favourite is the Black Mamba, a dish of squid ink fried rice served with prawns and finished with homemade fermented chilli sambal.
