Under the leadership of chef Chumpol Jangprai, R-HAAN presents an elegant exploration of Thailand’s culinary heritage through the lens of contemporary fine dining. The two-Michelin-starred restaurant is guided by the Thai proverb “There are fish in the water and rice in the fields,” reflecting the nation’s natural abundance and its deep cultural relationship with rice as the foundation of daily life. This philosophy informs the kitchen’s dedication to sourcing seasonal ingredients from farmers and artisans across Thailand. At the heart of the experience is the samrub, a traditional style of Thai dining in which multiple dishes are served together to create a harmonious balance of flavour, texture, and aroma. Each course reflects the complexity of Thai gastronomy while honouring time-tested culinary traditions. Presented on hand-painted ceramics inspired by royal tableware, the meal becomes not only a celebration of flavour but also of Thai craftsmanship and cultural heritage.
