Quenino at Artyzen Singapore offers a contemporary Asian degustation-only menu by chef Victor Liong
Singapore’s multiculturalism takes centre stage at Quenino, helmed by chef de cuisine Sujatha Asokan. The cooking is unapologetically Southeast Asian, deftly weaving familiar flavour profiles to evoke memories of local favourites without resorting to tired gimmicks. On the Discovery Tasting Menu, for instance, an octopus salad cleverly reimagines the classic cuttlefish kang kong: local vegetables are paired with a luxurious tempeh cream and lifted by a lemongrass kicap manis foam, which delivers the nutty depth of its inspiration without tipping into sweetness. Other reinterpretations include Hainanese chicken rice, yong tau foo, and even a playful nod to McDonald’s cult-favourite garlic chilli sauce. The true showstopper, however, is the green chilli ice cream—accompanied by pineapple jam, bak kwa and cheese—that recalls the riot of flavours found in Chinese New Year treats.

Vegetarian diners need not fret about being unable to get the full Quenino experience with its Discovery Tasting menu; the restaurant offers a completely vegetarian alternative of its full lineup.
