Province

Province is a tasting menu-only restaurant helmed by chef-owner Law Jia-Jun. Law cut his teeth in California’s acclaimed kitchens before returning home to draw on his Teochew-Hokkien heritage and childhood flavours. His cooking goes beyond mere riffs on familiar local and Asian dishes; instead, he weaves inventive, deeply personal combinations. Guests sit along a minimalist bar counter and are served directly by the kitchen team, with Law himself curating the wine pairings. The menu shifts seasonally, spotlighting produce from across the region. The grilled sawara with spiced bouillabaisse, and the Ibérico pork loin with crispy shallot and white curry, showcase the restaurant’s layered, forward-looking take on Singaporean cuisine. Province may eschew the trappings of traditional fine dining, but it offers a glimpse of Law’s evolving potential, and perhaps of what new Singaporean cuisine could become.
