A modern dining concept with orchestrated chapters that makes you feel like reading a book
After debuting with a yearlong Monochrome chapter, Preludio, the contemporary restaurant by Colombia-born chef-owner Fernando Arevalo, unveiled its second chapter in February. Preludio's Time-themed menu is inspired by the multiple facets of the evergreen concept. The dish Time Machine is a medley of five petit servings that each spotlights an ingredient prepared over a specific length of time and with various cooking processes. Marvellous morsels include the four dayaged foie gras, raspberries, pistachio, chicken, beetroot and 36 month-cured Iberico ham, summer melon and mint. Arevalo revisits his childhood with A Trip to the Past, comprising roasted Wagyu beef served with egg yolk, cauliflower and piquillo. One of the desserts, Amona, is a nostalgic homage to the pastry chef’s after-school snack of bread slathered with chocolate.
