Pomme

Seoul, South Korea

A serene Jongno hideaway devoted to the apple in all its forms, Bar Pomme turns the familiar fruit into an artful language of cocktails

Bar Pomme takes its name, and its soul, from the apple. Under the meticulous eye of Roy Kim, a veteran of nearly two decades behind the bar, this Jongno institution transforms a single fruit into a hundred possibilities. Apple brandy, apple gin, apple single malt whisky, even house-made vinegar and cordials, the ingredient is endlessly reinterpreted through fermentation, distillation, and a deep respect for balance.

The Apple Martini here is pared down, dry and precise. Golden Alley nods to the ginkgo trees of Seoul with passionfruit and quiet fermentation, while Healing evokes the spice of Korean markets in a glass. The bar’s walnut-panelled interior, conceived by Melody Song, brings the outside garden in, light spilling through floor-to-ceiling windows onto a room that hums with warmth.

It’s a bar of intellect and intimacy, where experimentation meets ease, and every cocktail tells a quietly Korean story.
