Housed within the Flower Dome at Gardens by the Bay, dining at Pollen is an experience in itself, complete with complimentary access to the Flower Dome— reportedly the largest glass greenhouse in the world. The epicurean journey is led by executive chef Michael Wilson, whose tasting menu draws on the flavours of nature’s bounty, evolving with the seasons. While the restaurant does not accommodate vegan requests, it does offer a vegetarian tasting menu from which diners can experience chef Wilson’s modern interpretive cuisine. Highlights include an appetising course of lettuce gazpacho with burrata, whey granita, cucumber and Espelette pepper; and a moreish amalgamation of beef heart tomato, black garlic balsamic, marigold, basil and sheep’s curd.
