Raffles Hotel’s iconic Bar & Billiard room has been transformed beautifully into Alain Ducasse’s dining concept. It whisks the diner into a sublime journey of the Italian Riviera.  To start off, the mazara del vallo red prawn tartare is the perfect appetiser, beautifully plated with creamy buffalo mozzarella, jelly and a dollop of luxurious Kristal caviar. The paccheri pasta, is perfectly al dente, and aromatic with the rich flavours of the amazingly tender, Barolo wine-braised beef cheek. For seafood lovers, the Cacciucco-style fish soup is not to be missed. Served with prawn, scallop, a variety of fish and finely diced vegetables, the velvety soup is a welcome wave of seafood flavours simmered in a tomato and wine stock. Those with a hearty appetite will love the classic, perfectly crusted, Milanese-style veal chop, which is aptly paired with a fresh arugula salad and cherry tomatoes.
