Helmed by co-owners Stephane Colleoni and chef Diego Chiarini, Oso Ristorante introduced its brand of genuine Italian hospitality and flavours to Singapore’s dining scene two decades ago. Despite several relocations over the years, Oso’s recipe for authentic Italian feasting has not changed, which says a lot about its strong allure in a dining scene overrun by Italian restaurants.   With its latest home perched atop Oasia Hotel’s iconic skyscraper vertical garden, the restaurant has elevated its game with sweeping vistas of the Singapore business district. Regulars will testify to how Colleoni, together with his strong and experienced team, warmly welcomes guests as if they are old friends coming over for a reunion. Meanwhile, Diego’s deft cooking continues to pull in the crowd with dishes like the angel hair pasta tossed in an umami-laden sea urchin sauce and grated bottarga, and the slow-cooked pork belly served with sweet figs and red wine sauce.
