Located near the historic Gyeongbokgung Palace, this restaurant doubles as a culinary research institution with a commitment to preserving Korea’s culinary heritage, and is dedicated to the revival and study of ancient recipes found in historical texts. Dishes are true to their historical roots, untouched by external influences, so offer a rare glimpse into the evolution of Korean cuisine. They include the likes of muneo-jeolyuk seasoned octopus slices; dalgwa, a traditional dish of deep-fried glutinous rice covered with pine nut powder; and pork belly and abalone.
